Bolognese Dishes: Niigata Italian Yakisoba known as "Italian" features Bolognese sauce with a unique twist on the traditional Niigata dish of yakisoba. It's known as a class B Gourmet dish and is said to be believed to have originated in 1959. The dish is typically served with chopsticks, though the spaghetti is eaten with forks as a much cleaner version of the original spaghetti bolognese. Both Niigata Spaghetti Bolognese and Niigata Italian Yakisoba are not exact replica of a traditional Italian Ragù alla bolognese. It is a local speciality that is the comfort food and comfort sauce of Niigata-ken.
